Our enological knowledge mainly focused on the production of Prosecco Superiore DOCG with the denomination of “Rive” (the slopes of the steep hills that are characteristic of the zone). These areas are characterized by a heroic viticulture: just the manual work of the man without mechanical supports. Moreover, thanks to the optimal microclimate we are able to use products with a minimal environmental impact.
Every “Rive” denomination represents a different expression of the specific peculiarities of each single hills.
After the careful selection in the vineyard and the attention to all steps of the production process in the cellar, we propose our “CRU” COL PAR SOR Rive di Col San Martino, in limited production.
They are varieties of vitis vinifera more resistant to fungal diseases of the vine. They require a very limited number of treatments, exclusively with organic methods, both in the vineyard and in the cellar. We believe they are the way to true sustainability, with a lower impact on the environment, making us look to the future with greater confidence.
